Juicy, warm, AIP Grilled Peaches with Ice Cream are the ultimate easy summer dessert! They’re also dairy-free & Paleo Autoimmune Protocol compliant.

Summer is starting to come to a close here in Canada. This is about the time of year that I can’t stop dreaming up ways to deliciously and easily take advantage of the last few weeks of summer’s harvests!

Peaches are one of my ultimate favorite fruits. Frozen in smoothies, preserved into a jam, or baked into a crisp-topped crumble with cinnamon are some ways that come to mind when I think of this juicy, plump fruit.

A Classic Comfort Food, Grilled Up & AIP-Style

You may have enjoyed canned peaches served over the top of coconut milk yogurt, and even chopped raw peaches with dairy-free ice cream, but this new recipe takes these classic flavor ideas to a new level with a simple step!

To make good use of our backyard and our grill, I wanted something easy, fast, and totally comforting. I fired up the grill, then seared 4 peach halves until they had grill marks and were nice and hot.

Two Ways to Serve Grilled Peaches

I love this treat served topped with a cool, creamy, 3-Ingredient AIP Vanilla Ice Cream recipe that my friend Sophie, of A Squirrel in the Kitchen created.

If you don’t have access to an ice cream maker, I have another option for you! Or if you simply want to cut down on a few steps, skip making the ice cream. You can enjoy the grilled peaches with chilled coconut cream instead!

All you have to do to make chilled coconut cream is to place a sealed can in the fridge overnight. Then when you are ready to serve your peaches, open the can and scoop out the thick, cold cream. (Be sure to leave the coconut water inside the can, and store it in a fresh container for use in a smoothie!)

Peaches Not in Season? No Outdoor Grill Available?

Not to worry! You can grill many other varieties of fruits instead. Just be sure to slice them in large pieces or halves so that they don’t fall through the grill.

Here are few ideas:

  • Pineapple rings
  • Pear halves
  • Apple rings
  • Skewered strawberries and/or blackberries
  • Bananas, whole
  • Melon rings
  • Plum halves
  • Nectarine halves
  • Grapefruit halves
  • Orange halves

You can also use a cast-iron indoor grill pan on the stovetop instead of barbecuing outdoors. Be sure not to use nonstick pans as many of them available to purchase are coated with toxic chemicals that are harmful to your health.

Equipment

  • grill -or- cast-iron stovetop grill pan

Ingredients

  • 2 scoops AIP-compliant vanilla ice cream (link to recipe in NOTES) -or- chilled coconut cream
  • 2 large ripe peaches, halved and pitted
  • 2 tbsp pure honey
  • pinch sea salt
  • fresh herbs like thyme, lavender, or chervil, chopped (for optional garnish)

Instructions

  • Make the AIP vanilla ice cream according to the directions, (link to recipe in NOTES) then keep it in your freezer while you make the peaches.
  • Preheat your grill -or- stovetop grill pan to medium.
  • Place the halved peaches on the grill with the cut sides facing down.
  • Cook for about 5 minutes until soft and grill marks appear on the peaches.
  • To assemble, place the peaches in two serving bowls, then add a scoop of AIP vanilla ice cream -or chilled coconut cream on top.
  • Drizzle with the honey, salt, and if desired, fresh herbs. Enjoy!
